Low-Fat, Freshly-Tossed Vegan Salad
Who says salads have to be boring? This low-fat, freshly-tossed vegan salad is anything but! Packed with flavorful vegetables and a tangy dressing, it's the perfect light meal or side dish. You don't have to be vegan to enjoy it, either! This salad works great for any low-fat or diet meal idea.
First we need to make the dressing, simply combine:
1 tablespoon of apple cider vinegar
2 tablespoons of olive oil
2 tablespoons of dijon mustard
1 tablespoon of honey .
Whisk together in a bowl until well combined, then set aside.
Next, prep your vegetables. For this salad, I like to use
a mix of greens
cherry tomatoes
cucumber
red onion.
But feel free to use whatever vegetables you like best. If you want to add some protein, you could also toss in some cooked chickpeas or edamame.
Once your vegetables are prepped, add them to a large bowl along with the dressing. Toss everything together until well coated. And that's it! Your salad is now ready to serve. If you need a little something extra, add a few of your favorite crackers or a slice of your favorite bread.
