If you're craving a delicious steak dinner but want to keep it low in fat, I have the perfect recipe for you. This is one my favorite dinners. As a matter of fact, I actually made it tonight! Keep reading, and I will guide you through step-by-step instructions on how to make a mouthwatering low-fat steak and potatoes dish that can be prepared with very little time and effort, but your taste buds won't know that!
INGREDIENTS
- 1 pound lean beef steak (such as sirloin or flank steak)
- 4 medium-sized potatoes
- 1 pack of baby carrots
- 1 large onion cut into 4 pieces
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
**if carrots and onions aren't your thing, you can choose other veggies.
another combination I enjoy is green beans and zucchini.
DIRECTIONS:
1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper, oil it with a little bit of olive oil and set aside.
2. Wash the potatoes thoroughly, then cut them long-way into halves. Place the potato halves in a large mixing bowl.
3. Wash your onion thoroughly, then cut into 4 pieces, place them into the bowl with the potatoes.
4. Open your small bag of baby carrots and pour them into the bowl with the potatoes and onions.
4. Drizzle the olive oil over the vegetables and season with garlic powder, paprika, salt, and pepper. Toss well to coat everything evenly with the seasonings.
5. Lay your steak evenly across the already-oiled pan.
6. Transfer the bowl of seasoned veggies into the baking sheet. Spread them in one layer across the steak. Make sure you completely cover the dish with aluminum foil and tighten it around the edges of the dish as much as possible, this allows the steak and veggies to steam while it bakes.
7. Bake in the preheated oven for 1 hour and 30 minutes, or until the potatoes are golden brown and/or until the veggies have softened to your taste. Remove the dish from the oven and let it stand for at least five minutes before removing the foil (careful, there may be some hot steam).
9. Serve the juicy steak alongside the crispy roasted potatoes and veggies. Garnish with barbeque sauce, or another sauce of choice.
