A Simple, Low-Fat Vegetable Beef Soup

INGREDIENTS:

-1 pound of lean ground beef
-1 can of cut green beans
-1 can of corn
-1 can of carrots
-1 envelope of onion soup mix
-1 onion, chopped
-6 cups of beef broth
-1 teaspoon garlic powder
-Salt and pepper to taste


DIRECTIONS:

1. In a large pot, sauté onion and garlic powder in a bit of olive oil until softened.

2. Add in the beef and cook until browned.

3.  Add the beef broth, and mix in the onion soup mix.

4. Stir in the veggies (I like to use a mix of carrots, corn and green beans but you can pick your own veggies if you don't like the ones in the recipe).  Add a little bit of water if you need to, until everything is covered.

5. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes.

6. Season with salt and pepper to taste, and then ladle into bowls and enjoy!
