Quick and Easy Whipped Strawberry Cheesecake
In the Summer time, I try to use fruit that is in season as much as possible. There is absolutely nothing better than some fresh, juicy strawberries freshly picked!
I also love using them as topping for my cheesecake. Today I am going to share with you my quick cheesecake cheat!
This mouthwatering dessert is the perfect treat for any occasion, whether you're serving it at a dinner party or enjoying it as a sweet indulgence at home. With its creamy filling, fresh strawberries, and a crispy graham cracker crust, this cheesecake is sure to delight your taste buds and leave everyone wanting more. I call it a cheat because I actually use one of those no-bake cheesecake kits to make it. It's true, not everything has to be made from scratch to be delicious!
INGREDIENTS:
1. A box of no-bake cheesecake mix. Usually it will come with a pack of crust mix as well.
2. 1 14 ounce pack / tub of strawberry glaze
3. At least 15 small strawberries.
4. 1 8 ounce tub of whip cream / cool whip
5. 1 8 ounce tub of original whipped cream cheese
6. 4 tablespoons of butter
7. 2 cups of milk
8. 4 teaspoons of regular sugar
9. 1/2 cup of confectioners sugar
CREATE YOUR TOPPING:
1. You want to do this the night before because the strawberries need time to soak in the glaze and the topping needs time to chill.
2. Rinse your strawberries off good and put them in a medium sized bowl.
3. Pour your glaze over them and mix well. Make sure the strawberries are all saturated in the glaze.
4. Cover and put in the fridge to chill overnight.
INSTRUCTIONS FOR CHEESECAKE FILLING:
1. In a medium-sized bowl mix the boxed cheesecake filling pack and the 1/2 cup of confectioners sugar with 2 cups of milk. Whip with a mixing spoon for about two minutes.
2. Add the whole tub of whip cream. Mix well for about two minutes.
3. Add the whole tub of cream cheese. Mix well until it's smooth. Make sure there are no clumps. This may take 2 - 4 minutes.
4. Once it's mixed well, set it aside to allow it to harden for a few minutes while you work on the crust.
INSTRUCTIONS FOR CRUST:
1. Melt the 4 tablespoons of sugar in a bowl (I do this in the microwave).
2. Pour 4 teaspoons of sugar into the melted butter and mix well.
3. Take the crust pack that came in the box and mix that in with the butter.
4. After a few moments, you should have a gooey crust consistency.
5. Pour the crush and even it along the bottom of your cake dish/baking dish or whatever it is you are going to put your cheesecake in.
6. Make sure you spread it out evenly.
INSTRUCTIONS TO COMPLETE YOUR CHEESECAKE:
1. At this point your cheesecake mix should be set pretty well, so go ahead and pour it over the crust. Make sure you spread it out evenly.
2. Cover the cheesecake and place it in the fridge for at least an hour.
3. Once an hour has passed, get your cake and bowl of topping out.
4. Pour your topping evenly over the cheesecake. Cover it and then place it back in the fridge.
This recipe creates a cheesecake with a thick, yummy whipped consistency. And those juicy strawberries on top really seal the deal!
This cheesecake is the perfect summer treat, but it's good for any season. I always make it on Thanksgiving and Christmas too!
