A Tropical Delight: Homemade Pineapple Upside Down Cake

 



Pineapple Upside Down Cake is a classic dessert that combines the sweetness of caramelized pineapple with a tender, buttery cake. This easy-to-follow recipe will guide you through the steps to create a delightful treat that's perfect for any occasion. Let's get started on this delicious journey!


INGREDIENTS:

1/4 cup unsalted butter, melted
1 cup packed brown sugar
1 can (20 ounces) sliced pineapple, drained (reserve the juice)
10 maraschino cherries
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1/4 cup vegetable oil
1/2 cup granulated sugar
1/2 cup reserved pineapple juice
1 large egg
1 teaspoon vanilla extract


DIRECTIONS:

1)  Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan.

2)  In a small bowl, mix the melted butter and brown sugar. Spread the mixture evenly over the bottom of the greased cake pan.

3)  Arrange the pineapple slices on top of the butter-sugar mixture, placing one slice in the center and the remaining slices around it. Place a cherry in the center of each pineapple slice.

4)  In a medium-sized bowl, whisk together the flour, salt, and baking powder.

5)  In another bowl, combine the vegetable oil, granulated sugar, reserved pineapple juice, egg, and vanilla extract. Mix until well blended.

6)  Gradually add the wet ingredients to the dry ingredients, stirring until the batter is smooth.

7)  Pour the batter over the pineapple and cherry arrangement in the cake pan.

8)  Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

9)  Allow the cake to cool in the pan for 5 minutes. Run a knife around the edge of the pan to loosen the cake.

10)  Place a serving plate over the cake pan and carefully flip it over to invert the cake onto the plate. Let the cake cool for another 10-15 minutes before serving.

**Sometimes I place this cake in the fridge, get it cool, and then add a thick layer of whipped cream to the top!  Just a tasty variation for you to consider!
