Creamy Tomato Soup
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- ½ cup heavy cream
- Salt and pepper to taste
- Melt the butter in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, for about 5 minutes until soft and translucent. Add the minced garlic and cook for another minute until fragrant. Don't rush this step — a properly softened onion is the sweet, mellow base that the whole soup is built on.
- Pour in the crushed tomatoes and vegetable broth. Add the dried thyme and a generous seasoning of salt and pepper. Stir everything together and bring to a gentle simmer.
